Think apples and the first thing that comes to mind is a juice or salad. But a recent dinner with the US Apple Export Council proved us otherwise. With an entire menu made with apple as the star ingredient, right from the drinks to the dessert, this deep red fruit shined through.
The menu started off with apple cocktails and mocktails. The Apple Cinnamon Sparkler and the Sangria were the perfect drinks to sip on while waiting for the food to arrive.
Next up was a creamy Curried Carrot and Apple Soup. Will hints of clarified butter and and added crunch from the pistachios, this unsual combination was quite a treat to the tastebuds.
While the soup was being slurped on, a cruchy salad was there to steal the limelight. Made with red wine poached apple and goat cheese, this was wiped out in minutes.
The main course served up some pan seared Apple Gnocchi with butternut squash and sage butter for the vegetarians and a Chicken Roulade with Apple Jus for the non-vegetarians. While the gnocchi was perfectly seared with a tinge of sweetness, the chicken was moist and succulent.
To end the meal on a sweet note, there was Apple Cheesecake with burnt butter ice-cream and Apple Baklava with homemade vanilla ice-cream. Needless to say, both these desserts were the perfect way to end a good meal.
So while apples are great as a 4 pm snack or all chopped up in a fruit salad, the versatility of this fruit is evident with this menu and so maybe we all can try to give the apples at home a little twist and make a meal out them.
